Good food often goes hand in hand with conviviality - the Brasserie im Stadtgut stands for both. Every day, Heike Kuttner and her team feed around 90 hungry guests. The atmosphere in the brasserie is not only created by the team's hard work, but also by the restaurant's own air concept.

“We are a hub and a platform for countless companies here in the Stadtgut. Many teams meet at our tables at lunchtime. Not just from different areas, but from different companies. If an infection were to break out here, it would have devastating consequences. It could trigger a chain reaction and cause entire areas of the company to shut down - including ours. That is not an option. That's why we looked around for ways to prevent these chain reactions. Our new indoor air concept now does exactly that: we serve our customers healthy and tasty creations and with healthy, clean air,” explains Heike Kuttner, owner of the Brasserie im Stadtgut.
Indoor air and virus protection filters ensure healthy indoor air in restaurants
Heike Kuttner is talking about the room air filter Kappa Puron® SC, a high-performance room air filter with certified HEPA class H14 filter elements. This certification guarantees that 99.995% of all airborne pollutants such as viruses, bacteria and pollen are filtered out. Out of 100,000 particles, just five make it through the filter elements of the Kappa Puron® SC. Thanks to this first-class filter property and high air performance, the room air can be permanently cleaned.
The design of the device ensures a 360-degree effect. A high air quality is quickly achieved during operation.
The brasserie has also equipped its ventilation system with Kappa Wavebionix® filter elements. This is the first filter element to be tested with live viruses by the Austrian Research Institute for Chemistry and Technology, OFI Vienna - with impressive results: 97.2% of all viruses are removed. This is crucial for the operation of ventilation systems, as conventional and poorly maintained ventilation systems often add a certain amount of recirculated air to the fresh air. As a result, these systems function as virus distribution centers. An installed Kappa Wavebionix® counteracts precisely this, as it collects and retains the viruses centrally.

Heike Kuttner has used the pandemic as an impetus to adapt her existing indoor air concept to future requirements: “Healthy indoor air is an essential part of a modern restaurant business, and the current situation is heightening awareness of healthy air. More and more guests are actively asking me about a hygiene concept - it makes me proud to tell them that we are actively taking care of indoor air in addition to the usual measures. Thanks to the investment, our guests can concentrate fully on interacting with each other and the taste experience on the plate.”
Operating profile of the Brasserie im Stadtgut
The Brasserie im Stadtgut was opened in 2019. Since then, Heike Kuttner and Georg Pettermann have been serving 90 guests every day. The menu ranges from classic Austrian cuisine such as Wiener Schnitzel to oriental dishes such as couscous salad and shakshuka. The brasserie focuses on regional and sustainable ingredients. In addition to the delicacies, the brasserie is also a meeting place for discussions outside office hours and ensures that residents and sports enthusiasts can enjoy refreshments and exchange ideas.
